PEACH FOOL

A refreshing fruit dessert, old fashioned and easy to make.

Serves 6

1 cup heavy whipping cream, whipped
4 ripe peaches, pitted and peeled
1/8 or so cup of sugar
1/8 teaspoon or so almond extract

Whip cream with almond extract. Pulse peaches in the food processor until they are reduced to tiny bits. Set peach slurry in a strainer for about 10 minutes to draw off some of the juice [use the juice in your mixed fruit juices]. In a bowl, add sugar to the peaches and then blend into the whipped cream. Divide into six dessert dishes or ramekins. May be served chilled or at room temperature.
